Vegan Cauliflower Leek Cream Soup

Soups and especially a good vegan soup is my choice of light lunch or dinner. And I love making up dishes from few ingredients. This is what happened in my kitchen the other day when I only had 3 things available in my fridge. I’ve created a delicious vegan soup which doesn’t contain any dairy either, so it’s great for anyone even with sensitivities.

Here is how you prepare this vegan soup. I’ve created a short how-to video as well.

Vegan Soup - Cauliflower LeakIngredients:

Half cauliflower
1 leek
1 zucchini
1 small onion
1 tbsp coconut oil
1 organic vegetable stock (optional)
Salt, herbs of your choice
100-150 ml coconut milk

Method:

  1. Sautee the leek and onion with the oil.
  2. Add the zucchini and cauliflower and some water to cover.
  3. Add the vegetable stock if you wish, plus the spices.
  4. Add the coconut milk at the end and blend the soup.

Easy vegan cream soup.
