Soups and especially a good vegan soup is my choice of light lunch or dinner. And I love making up dishes from few ingredients. This is what happened in my kitchen the other day when I only had 3 things available in my fridge. I’ve created a delicious vegan soup which doesn’t contain any dairy either, so it’s great for anyone even with sensitivities.
Here is how you prepare this vegan soup. I’ve created a short how-to video as well.
Ingredients:
Half cauliflower
1 leek
1 zucchini
1 small onion
1 tbsp coconut oil
1 organic vegetable stock (optional)
Salt, herbs of your choice
100-150 ml coconut milk
Method:
- Sautee the leek and onion with the oil.
- Add the zucchini and cauliflower and some water to cover.
- Add the vegetable stock if you wish, plus the spices.
- Add the coconut milk at the end and blend the soup.
