Vegan Cauliflower Leek Cream Soup

Serves: 3-4
- Half cauliflower
- 1 leek
- 1 zucchini
- 1 small onion
- 1 tbsp coconut oil
- 1 organic vegetable stock (optional)
- Salt, herbs of your choice
- 100-150 ml coconut milk
- Sautee the leek and onion with the oil.
- Add the zucchini and cauliflower and some water to cover.
- Add the vegetable stock if you wish, plus the spices.
- Add the coconut milk at the end and blend the soup.
