When time is tight in between coaching sessions or when you are working in an office environment, the easiest meal you can throw together is a vegan lunch. Take some fresh greens and veggies, plus add some quality, gluten free grains and your healthy protein packed lunch is ready.

Here is the quick recipe:
1/2 cup quinoa, cooked in salted water. Add the juice of quarter lemon
1 cup rocket (ruccola)
1 cup baby spinach
1 spring onion
1 avocado
drizzle of pumpkin seed oil
So that is all you need. Easy isn’t it? 🙂
